Make the recipe
- Preheat oven to 475°F (245°C). Cover small, shallow baking sheet with nonstick foil(or spray foil-lined tray with cooking spray); set aside. On one side of steak, score meat 1/4 inch deep to form large diamonds to allow meat to roll up easily.
- In small bowl, combine garlic salt, black pepper, nutmeg, and red pepper. Rub spices on uncut side of beef; spread with pesto. Top with spinach and cheese. Starting at short end, roll up.
- Slide four 10-inch pieces of kitchen string under the roll and tie in 11/2-inch intervals to secure. With sharp knife, cut into four rolls.
- Arrange on prepared baking sheet, cut side up. Bake 15 to 18 minutes or until desired doneness.
- Serve immediately.
