  2. Addpork shank and chopped onion.
  3. Bring to a boil.
  4. Simmerfor1 hour.
  5. Drain,reserving 2 cups liquid.
  6. Place beans andpork ina3-qt casserole or bean pot.In a small bowl,combinemolasses, brown sugar,ymustard,ginger,andallice; stirintothereserved liquid andpour overbeans.
  7. Cover andbakeat300°F for3 to31/2 hours, until beans are tender.
  8. Remove pork shank,trim meat fromboneandreturnmeatto casserole.Bake uncovered 1 to1 1/2 hours more,until liquidisabsorbed and beansaretender.
