At the stove
Make the recipe
- Cook bacon in a Dutch oven or heavy roasting pan until crisp.
- Remove bacon with a slotted spoon; add olive oil to the pan.
- Brown Cornish hens over medium-high heat for about 10 minutes.
- Sprinkle hens with 1/4 tsp thyme lt seasoning, and garlic powder.
- Roast at 375°F (190°C) for 45 minutes or until done.
- Transfer hens to a serving plate and keep warm; skim fat from drippings. Note: One 3 lb chicken may be substituted; roast about 1 hour.
- Add heavy cream, white wine or water, chopped tomato, and remaining 1/4 tsp thyme; bring to a boil.
- Reduce heat to medium, simmer about 10 minutes until slightly thickened stir in bacon, and serve with hens.
