- In small bowl, combine mayonnaise,buttermilk (or yogurt), and blue cheese.
- Cut off wing tips and discard. Cut wings in half at the joint.
- Carefully place half of wings in hot oiland fry,gently stirringoccasionally,until crispyandgolden,about 9 mins.With slotted spoon, transfer wings to wire rack set overbaking sheet.Return oil to 375°F and cook remainingwings.
- While first batch is cooking, in skillet,meltbutter;stirin hotsauceandvinegar.Add fried wings; toss to coat. The longer wings are in sauce, the spicier they become. Serve wings with blue cheesedip.
